...fish right after? I'd like to start a Fish Only aquarium with ocean water which is really clear since I live real close to the Cancun coast. I have plenty of space for a few fish to swim, 75gal tank. Would I be able to add fish right away? Or would I have to let the water cycle?

You would still need to have the aquarium cycle. The filter... the biological media, and the substrate. 2-4 weeks should be enough time and then you can add fish.
You want to make sure that you get water away from the coast as it can be polluted and dirty. If you choose to go with real ocean water you want it collected from good flow and away from boat traffic. It is also a good idea to learn how to make your own saltwater in case of a problem. It isnt that hard to do but still a good idea to know how.
