Siamese fighting fish (betta fish) fighting mode!?

I have a betta fish and so does my brother. They are in seperate tanks and are both boys.
When we sit the to tanks together my brothers fish gills out and it flares out its fins when it sees my fish. it does this all the time. What does this mean? My fish just does nothing and keeps swimming.

Also i have friends have betta fish. When the put their finger just above the water their fish jumnp out trying to get their finger. How can i do that?

Also will my betta come to me when i go near it or will it recognise its name? Just another quick question, can i train it to do anything if so what!
